Besides cutting the spaghetti squash, this is a very simple and straightforward dish to make on a weekday.

Ingredients

  • tsp Olive Oil

  • 1/4 Red Onion

  • 1/2 tsp Garlic (minced)

  • 1/3 cup Chickpeas

  • 3 sprigs Thyme

  • 12 Cherry Tomatoes

  • 1 Spaghetti Squash

  • 1 cup Spinach

  • 2 tbsp Feta

Directions

  • Cut spaghetti squash in two pieces and cover with covered with a damp towel, cook in the microwave for 15 minutes.
  • Heat oil in a medium skillet over medium-high and add onion and garlic. Sauté 1-2 minutes.
  • Add chickpeas, thyme, and tomatoes. Cook for an additional 2-3 minutes.
  • Add spaghetti squash, spinach. Toss gently to combine. Cook until spinach is at desired wiltedness.
  • Plate and sprinkle with feta.
