The brunch option when you have leftover tuna and half an avocado in the fridge.

Ingredients

  • 1 Egg

  • 1/2 English Muffin

  • 1/2 Avocado

  • 1 tsp Garbanzo Beans

  • 5 leaves Arugula

  • 1/2 tsp Balsamic Vinegar

  • Salt

  • Black Pepper

Directions

  • Heat a 3/4 full pot of water until gently boiling.
  • Use a fork to mash the avocado. Top with garbanzo beans.
  • Start toasting English muffin.
  • Stir the water and make a vortex, add the egg to the center. Flip egg once halfway through cooking. Let cook for 3 minutes only!
  • Plate by adding English muffin, avocado, tuna mixed with garbanzo beans, poached egg, arugula, balsamic vinegar, salt, and pepper to taste.
