  1. Cut spaghetti squash in two pieces and cover with covered with a damp towel, cook in the microwave for 15 minutes.
  2. Heat oil in a medium skillet over medium-high and add onion and garlic. Sauté 1-2 minutes.
  3. Add chickpeas, thyme, and tomatoes. Cook for an additonal 2-3 minutes.
  4. Add spaghetti squash, spinach. Toss gently to combine. Cook until spinach is at desired wiltedness.
  5. Plate and sprinkle with feta.
