Besides cutting the spaghetti squash, this is a very simple and straightforward dish to make on a weekday.
Instructions
- Cut spaghetti squash in two pieces and cover with covered with a damp towel, cook in the microwave for 15 minutes.
- Heat oil in a medium skillet over medium-high and add onion and garlic. Sauté 1-2 minutes.
- Add chickpeas, thyme, and tomatoes. Cook for an additonal 2-3 minutes.
- Add spaghetti squash, spinach. Toss gently to combine. Cook until spinach is at desired wiltedness.
- Plate and sprinkle with feta.
